  • 1 1/2 lb. peppers (1/2 lb. Anaheim, 1/2 lb. Hungarian wax, 1/2 lb. jalapeno)
  • 6 large onions
  • 20 to 24 large tomatoes
  • fresh garlic to taste
  • 1 tsp. basil
  • 1 tsp. oregano
  • 1 tsp. cilantro
  • 2 c. vinegar

    Blanch tomatoes and remove cores and skins.

    Quarter. Coarsely chop peppers and onions.

    Combine all ingredients.

    Cook 1 1/2 hours.

    Process in hot water bath.

    Pint jars, 10 to 12 minutes.
