Ingredients

  • 8 lb. fresh tomatoes, stemmed and peeled
  • 2 large green peppers, chopped
  • 2 medium banana peppers, chopped
  • 2 jalapeno peppers, chopped (optional)
  • 1/2 large Spanish onion, chopped
  • 2 tsp. salt
  • 1 1/2 Tbsp. chili powder
  • 3/4 tsp. cumin
  • 1 Tbsp. fresh crushed garlic
  • 6 oz. tomato paste

Directions

    Cook peppers and onion for 1/2 hour in nonstick frypan.

    In a large kettle, add everything and simmer until thickened (several hours).

    Salsa can be frozen or processed.
