Ingredients

  • 18 tomatoes, skinned and chopped
  • 6 large cloves garlic, chopped
  • 2 bell peppers, chopped
  • 6 jalapeno peppers, chopped (more if you want it hot!)
  • 3 large onions
  • 1 c. vinegar
  • 2 Tbsp. cumin
  • 1 1/2 Tbsp. salt

Directions

    Let tomatoes sit 1 hour; drain.

    Combine all ingredients. Heat to boiling; simmer for 10 to 15 minutes.

    Place in a water bath for 15 minutes.

    Makes about 6 pints.
