- 4 boneless chicken breasts
- 1 Tbsp. olive oil
- 1/3 c. almonds, chopped
- 1 garlic clove, minced
- 1 c. salsa
- 1/4 c. water
- 1 Tbsp. honey
- 1 tsp. cumin
- 1/2 tsp. cinnamon
- 2 Tbsp. dried currants
Directions

1Combine salsa, currants, water, honey, cinnamon and cumin and mix. Heat oil in skillet. Cook almonds for 1 to 2 minutes. Set aside.

2Add garlic. Cook for a minute or less and then add chicken, cooking until browned on both sides. Add the salsa mixture to the chicken. Reduce heat and put on cover. Simmer for 15-20 minutes until chicken is done. Add almonds and stir. Serve with rice or couscous. Serves 4.
