  • 2 large eggs
  • 1 dash almond milk or skim milk
  • 1 salt and pepper
  • 1 Cayenne pepper spice
  • 1/4 cup chopped peppers, I like red and green
  • 2 tbsp fat free shredded cheddar cheese
  • 2 clove of garlic minced
  • 2 tbsp salsa, I like pineapple Al pastor
  • 1/4 cup chopped onion

Directions

    Spray frying pan with nonstick cooking spray

    Heat to medium heat

    Saute peppers and onion and garlic until tender
  4. 4
    Mix together eggs, milk, cayenne, s&p and cheese
  5. 5
    Pour into pan and cook until done to Ur desired consistency
  6. 6
    Plate and top with salsa
