- 1 c. finely minced, peeled tomato
- 1/2 c. tomato sauce
- 1 (4 ounce.) can diced green chili peppers, liquid removed
- 1/4 c. finely minced onion
- 1/4 c. finely minced green pepper
- 1 to 2 tbsp. snipped cilantro or possibly parsley
- 2 tbsp. lemon juice
- 1 clove garlic, chopped
- 1/8 teaspoon pepper
Directions

1In a mixing bowl combine the above.

2Place about half the mix in a blender or possibly food processor.

3Cover and blend or possibly process till smooth.

4Stir in remaining mix (don't process).

5Cover and refrigerateat least 4 hrs, stirring occasionally.

6Store in refrigerator up to one week.

7Makes about 2 c..
