Salsa Turkey Loaf

- 2 eggs
- 34 cup salsa, medium chunky
- 12 cup Italian breadcrumbs
- 12 onion, grated
- 12 green pepper, finely diced
- 12 teaspoon chili powder
- 12 teaspoon salt
- 14 teaspoon dried thyme
- 14 teaspoon pepper
- 1 12 lbs ground turkey (or chicken)
- 12 cup monterey jack cheese, shredded
Directions

1Preheat oven to 375 degrees.

2In a bowl using a fork, lightly beat eggs.

3Mix in 1/4 cup of salsa, breadcrumbs, onion, green pepper, chili powder, pepper, salt, and thyme.

4Mix in turkey, incorporating evenly throughout.

5Shape into meatloaf pan.

6Add remaining salsa to top of loaf.

7Sprinkle with cheese.

8Bake in oven for approximately 1 hour and 20 minutes.

9Cover with foil for first hour and then remove so cheese browns.

10Let stand five minutes before serving.
