  • 2 cups cholesterol-free egg product
  • 1 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
  • 1 cup chopped green pepper
  • 1/2 cup chopped onion
  • 1/2 cup KRAFT 2% Milk Shredded Mild Cheddar Cheese
  • 1/2 cup TACO BELL Thick & Chunky Salsa

Directions

    Beat egg product and cottage cheese in small bowl with wire whisk until well blended.

    Spray medium nonstick skillet with cooking spray.

    Add green pepper and onion; cook on medium-high heat 2 to 4 minutes or until tender, stirring occasionally.

    Add egg product mixture and cheddar cheese.

    Reduce heat to medium.

    Cook 8 to 10 minutes or until set, stirring frequently.

    Serve topped with salsa.
