Ingredients

  • 1 tablespoon peanut oil
  • 1 teaspoon ginger finely chopped
  • 1 clove garlic crushed
  • 1 pound ground pork
  • 6 scallions finely sliced, plus extra for garnish
  • 1 1/2 ounces ham chopped
  • 1 3/4 ounces mushrooms chopped
  • 1 3/4 ounces bamboo shoots
  • 1 ounce bean sprouts
  • 2 tablespoons dry sherry
  • 1 tablespoon soy sauce plus extra to serve
  • 1 tablespoon oyster sauce
  • 8 leaves iceberg lettuce
  • 1 red chili sliced, optional

Directions

    Heat oil in a large frying pan on high. Saute ginger and garlic for 30 seconds, or until fragrant.

    Add pork and brown for 4-5 mins, breaking up the lumps with the back of a spoon as it cooks.

    Stir in scallions, ham, mushrooms, bamboo shoots and bean sprouts. Cook, stirring, for 3-4 mins.

    Stir in sherry and sauces. Spoon into lettuce leaves and sprinkled with extra scallion. Serve with extra soy sauce and sliced chili (if using).
