  • 1 lb. shrimp, shelled and deveined
  • 1 Tbsp. butter
  • 1 1/2 tsp. curry powder
  • 1 tsp. salt
  • 1 medium tomato, chopped
  • 1 medium onion, chopped
  • 1 Tbsp. lemon juice
  • 1 c. sour cream
  • 3 avocados
  • 6 lettuce leaves

Directions

    In a saucepan, melt butter with curry powder and salt; add chopped tomato and onion.

    Cook until soft.

    Add lemon juice, shrimp and sour cream.

    Heat thoroughly.

    Cut avocados in halves, remove seeds and skin and fill centers with the hot curry. Arrange on lettuce leaf.

    May be served with rice.
