- 1 lb. shrimp, shelled and deveined
- 1 Tbsp. butter
- 1 1/2 tsp. curry powder
- 1 tsp. salt
- 1 medium tomato, chopped
- 1 medium onion, chopped
- 1 Tbsp. lemon juice
- 1 c. sour cream
- 3 avocados
- 6 lettuce leaves
Directions

1In a saucepan, melt butter with curry powder and salt; add chopped tomato and onion.

2Cook until soft.

3Add lemon juice, shrimp and sour cream.

4Heat thoroughly.

5Cut avocados in halves, remove seeds and skin and fill centers with the hot curry. Arrange on lettuce leaf.

6May be served with rice.
