  • 2 lb. bacon or butts meat
  • 2 large onions
  • 2 whole chickens (raw)
  • 2 lb. red smoked sausage, sliced
  • 3 lb. rice
  • salt and pepper to taste and water

    Put in a 12-quart pot the bacon cut in small pieces.

    Add onion and cook brown.

    Put water 3/4 full.

    Add chicken; boil 15 minutes.

    Add sausage, salt and pepper; boil 30 minutes.
