Ingredients
- 12 cup white sugar
- 1 teaspoon bicarbonate of soda
- 1 12 cups self raising flour (or make it SR with baking powder)
- 1 cup mixed dried fruit
- 1 tablespoon butter (can substitute with margarine)
- 12 cup boiling water
Directions

1Mix sugar, fruit and bicarb in a mixing bowl.

2Melt the butter in hot water and add to mix, stirring well.

3Add the SR flour to the mix.

4Bake in a loaf tin at 180 for 35 minutes or until a skewer comes out clean.
