  • 2 c. flour
  • 3/4 c. powdered sugar
  • 1/2 c. unsalted butter
  • 2 eggs
  • 1/2 tsp. baking powder
  • 1/4 tsp. vanilla
  • apricot jam

Directions

    Cream butter and sugar in the mixer.

    When soft and fluffy, beat in the eggs and the vanilla.

    Add baking powder and flour to make a firm dough.

    Cut it with a small cookie cutter.

    Preheat oven to 350°.

    Place on greased cookie sheet.

    Bake for 15 minutes or until lightly coloured.

    When cool, spread jam between two cookies, then dust it with powdered sugar.
