- 2 cans sardines 3.75 oz each, in oil, undrained
- 1 lemon peel finely grated
- 1 tablespoon lemon juice
- 8 tablespoons butter at room temperature
- 1 tablespoon chopped parsley plus additional leaves, to garnish
- crusty bread Sliced, or crackers, to serve
Directions

1Process sardines, lemon peel and juice, and butter in a food processor until smooth. Transfer to a small bowl. Stir in parsley. Season to taste.
