  • 2 cans sardines 3.75 oz each, in oil, undrained
  • 1 lemon peel finely grated
  • 1 tablespoon lemon juice
  • 8 tablespoons butter at room temperature
  • 1 tablespoon chopped parsley plus additional leaves, to garnish
  • crusty bread Sliced, or crackers, to serve

Directions

    Process sardines, lemon peel and juice, and butter in a food processor until smooth. Transfer to a small bowl. Stir in parsley. Season to taste.

    Garnish with parsley leaves and serve with crusty bread or crackers.
