Satay Chicken With Sesame Choy Sum

  • 1/2 cup chopped peanuts
  • 2 tbsp chopped fresh cilantro
  • 2 tbsp flaked coconut
  • 1 tbsp finely grated lime peel
  • 4 small boneless skinless chicken breasts, trimmed
  • 2 None egg whites, lightly beaten
  • 1 can (14 oz) coconut milk
  • 1/2 cup crunchy peanut butter
  • 1/3 cup sweet chili sauce
  • 1 bunch choy sum or other Asian greens, trimmed and halved
  • 2 tsp sesame oil

    Preheat the oven to 400°F. Line a baking pan with parchment paper.

    Combine the peanuts, cilantro coconut and lime peel in a small bowl.

    Brush the top of each chicken breast with egg white. Dip chicken into peanut mixture, pressing firmly. Place chicken, crusted side up, on the prepared pan.

    Bake for 10-15 mins until chicken is cooked through.

    Meanwhile, for the satay sauce, combine coconut milk, peanut butter and chili sauce in a medium saucepan. Stir on low heat until combined. Bring to a boil. Reduce heat to low; simmer for 4-5 mins, until slightly thickened.

    Blanch choy sum in a pan of simmering water for 1-2 mins. Drain well. Toss in a bowl with sesame oil.

    Slice each chicken breast. Drizzle with satay sauce and serve with choy sum.
