- 1 large cauliflower (2 lb.)
- 4 tomatoes, chopped
- 1/2 c. chopped green onions
- 1/2 c. sliced celery
- 3 Tbsp. chopped parsley
- 2 Tbsp. olive oil
- 3/4 tsp. dried basil leaves
- 3/4 tsp. dried oregano leaves
- 1/2 tsp. salt
- 1/4 tsp. black pepper
Directions

1Cut cauliflower into flowerets.

2Steam over simmering water for 6 to 8 minutes or until tender-crisp.

3Meanwhile, combine all remaining ingredients in a saucepan.

4Simmer for 10 minutes. Place cauliflower on serving plater.

5Spoon tomato sauce over the top.

6Serve with broiled lamb chops, baked potatoes and lemon souffle for dessert.
