  • 1/2 c. red table or dessert wine
  • 4 medium onions, sliced
  • 1/4 c. brown sugar
  • 4 bay leaves
  • whole cloves
  • salt
  • mustard seed
  • peppercorns
  • 1 (4 lb.) beef chuck cross rib pot roast
  • 3 Tbsp. all-purpose flour
  • 2 Tbsp. salad oil
  • potato pancakes (see recipe)
  • 1/2 c. fine gingersnap crumbs
  • 1/2 c. sour cream (optional)

    For marinade, in large bowl, combine vinegar, water, wine, 3 of the sliced onions, brown sugar, bay leaves, 2 teaspoons cloves, 2 teaspoons salt, 1 teaspoon mustard seed and 1/2 teaspoon peppercorns.
