  • 1/2 c. sweet red wine
  • 1 c. water
  • 2 Tbsp. sugar
  • 2 tsp. salt
  • 1/2 tsp. whole black pepper
  • 2 onions, sliced
  • 1 tsp. mustard seed
  • 12 whole cloves
  • 4 bay leaves
  • 4 lb. rump or bottom round
  • 2 Tbsp. flour
  • 1/4 c. fat
  • 3/4 c. liquid (from marinade)
  • 10 ginger snaps (optional)

Directions

    Mix vinegar, red wine, water, sugar, salt, pepper, sliced onion, mustard seed, cloves and bay leaves in a large deep bowl. Wipe meat with a damp cloth and place in bowl. Let stand in refrigerator for 2 days turning the meat.
