- 1 lb. sausage
- 1 large onion, chopped
- 2 eggs, lightly beaten
- 1 1/2 c. self-rising corn meal
- 1 (17 oz.) can cream-style corn
- 3/4 c. milk
- 1/4 c. vegetable oil
- 2 c. (8 oz.) grated cheese
Directions

1Preheat oven to 425°.

2Grease a 10-inch skillet or 2-quart baking dish; set aside.

3Brown sausage and onion in medium skillet; drain well.

4Combine eggs, corn meal, corn, milk and oil. Pour half of corn meal mixture into prepared dish.

5Sprinkle with sausage mixture and cheese.

6Pour remaining batter over top.

7Bake 30 to 40 minutes.

8Let cool 10 minutes.
