  • 12 lb turkey sausage or 12 lb other low fat sausage
  • 12 cup onion, chopped
  • 12 teaspoon salt
  • 14 teaspoon garlic powder
  • 12 eggs
  • 14 /c green pepper, chopped
  • 14 teaspoon pepper
  • 12 / c shredded cheddar cheese

Directions

    In a skillet brown the sausage and drain off any fat.

    In a bowl, beat the eggs.

    Add onion, green pepper, salt, pepper, and garlic powder.

    Stir in the sausage and cheese.

    Spoon by 1/3 cupfuls into greased muffin cups.

    Bake at 350 degrees for 20-25 minutes, or until a knife inserted near centre comes out clean.
