- 2 lb. sweet Italian sausage
- 1 onion, chopped
- 2 bell peppers, chopped
- 4 c. beef broth
- 1 1/4 c. cooking sherry
- 1 Tbsp. parsley
- 1 Tbsp. basil
- 1 Tbsp. oregano
- 1 tsp. garlic, chopped
- 28 oz. can crushed tomato in puree
- 8 oz. pasta bows
- salt and pepper
Directions

1Cut sausage in small pieces and saute in a large pot.

2Add onions and peppers and saute.

3Add broth and sherry.

4Bring to a boil.

5Add parsley, basil, oregano, garlic and tomatoes.

6Cover and simmer for 1 hour.

7If too thick, add a little water.

8Add bows and cook until they are done, about 20 minutes.

9Sprinkle each portion with Parmesan cheese.
