- 1 34 lbs Italian sausage
- 1 14 lbs broccoli florets
- 1 teaspoon olive oil
- 2 shallots
- 3 garlic cloves
- 14 dried red chili, chopped
- 12 cup chicken broth
- 1 tablespoon lemon juice
- 6 black olives, pitted
Directions

1Prick sausages, place in a single layer in a large frying pan, add cold water to 1/2 inch.

2Bring to boil, reduce heat, and simmer for 20 minutes, turning from time to time.

3If the water evaporates too rapidly, add a bit more.

4Meanwhile, boil the broccoli in salted water for 4-5 minutes.

5Drain and set aside.

6Pour off the fat from the skillet and wipe it out with a paper towel.

7Add the oil and brown the sausages briefly.

8Push them to one side and add the shallots, garlic and chile (or chile flakes).

9Cook for 3-4 minutes.

10Add broth and lemon juice.

11Cook gently until reduced by half.

12Add broccoli and olives.

13Gently mix until heated through.
