  • 1 34 lbs Italian sausage
  • 1 14 lbs broccoli florets
  • 1 teaspoon olive oil
  • 2 shallots
  • 3 garlic cloves
  • 14 dried red chili, chopped
  • 12 cup chicken broth
  • 1 tablespoon lemon juice
  • 6 black olives, pitted

    Prick sausages, place in a single layer in a large frying pan, add cold water to 1/2 inch.

    Bring to boil, reduce heat, and simmer for 20 minutes, turning from time to time.

    If the water evaporates too rapidly, add a bit more.

    Meanwhile, boil the broccoli in salted water for 4-5 minutes.

    Drain and set aside.

    Pour off the fat from the skillet and wipe it out with a paper towel.

    Add the oil and brown the sausages briefly.

    Push them to one side and add the shallots, garlic and chile (or chile flakes).
