Sauteed Chicken Strips

Ingredients

  • 2 whole broiler-fryer breasts, split, boned and skinned (about 12 oz. each)
  • 1/2 tsp. fresh ground pepper
  • 1/2 tsp. salt
  • 4 tsp. cornstarch
  • 4 tsp. oil
  • 1 egg white
  • 6 Tbsp. butter or margarine
  • Marinated chicken strips
  • 1/2 c. minced parsley
  • 1/4 c. minced chives

Directions

    In large heavy skillet over medium-high heat, cook butter until bubbly and begins to brown.

    Add marinated chicken strips. Saute about 4 minutes or just until opaque throughout and lightly golden.

    Fold in parsley and chives.

    Immediately remove to warm serving plate.

    Makes 4 servings.
