8 steps

Ingredients

  • 1 stick Lotus Root
  • 1 Tablespoon Vegetable Oil
  • 1 piece Ginger, Peeled And Thinly Sliced
  • 3 cloves Garlic, Minced
  • 3 bunches Spring Onions, Only The White Parts, Sliced On The Bias
  • 1 Tablespoon Sesame Oil
  • 1 Tablespoon Soy Sauce
  • 1 teaspoon Sugar

Directions

  1. 1
Slice lotus root as thinly as you possibly can, and as you do that, toss each slice into a bowl of vinegar water to prevent the lotus roots from oxidizing.
  2. 2
Heat vegetable oil in a skillet.
  3. 3
When pan is hot, throw in ginger and garlic and move them around for about 2030 seconds until aromatic but before they burn.
  4. 4
Add spring onions and lotus root, turning the heat down to medium as you do.
  5. 5
At this time, there will be very little oil in the pan, so add the sesame oil.
  6. 6
Continue to saute all the ingredients in the pan for about 1 minute before adding the soy sauce and sugar.
  7. 7
Toss everything together to evenly coat the ingredients with the soy sauce.
  8. 8
When the lotus root slices have taken on a beautiful golden caramelized hue, turn the heat off and serve!
