- 1 medium sweet red bell peppers quartered, and seeded
- 1 medium tomatoes cut in half
- 2 tablespoons lemon juice
- 2 teaspoons basil fresh, chopped
- 1 x black pepper to taste
Directions

1Grill bell pepper until skin begins to blister and pepper begins to turn limp.

2Add tomato to grill a minute or two after starting the pepper.

3Grill the tomato until it just begins to turn limp.

4Remove from grill and let cool.

5Coarsely chop pepper and tomatoes, combine with remaining ingredients.

6Let sit uncovered at room temperature while fish is cooking.
