Sauteed Red Potatoes

- 1 lb red potatoes
- 3 tablespoons oil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Directions

1Wash all potatoes and slice into 1/8 - 1/4 inch slices.

2Saute potatoes in oil for a few minutes to coat well.

3Cover the pan and occassionally stir to allow the potatoes to brown.

4Cook for about 20 minutes this way.

5Add salt and pepper, and continue cooking for an additional 5 minutes with no lid stirring frequently.
