Ingredients

  • 1 5/8 cups flour
  • 5 15/16 tablespoons extra-virgin olive oil or vegetable oil
  • 3/4 cup grated Parmesan cheese
  • 5 3/8 tablespoons milk
  • 4 eggs
  • 2 teaspoons baking powder
  • 1 3/4 ounces mortadella or any cold cut you prefer
  • 1 3/4 ounces emmentaler or any cheese you prefer
  • salt and ground black pepper

Directions

    Preheat the oven to 180 degrees Celsius.

    Place the eggs in the the mixer and mix for 10 seconds, then add the oil, mix for a few seconds more.

    Add the flour sifted with the baking powder, the grated Parmesan cheese, the salt, and the pepper. The batter will be creamy.

    Place half of the batter in a deep baking pan lined with wax paper.

    Then add the bologna and the emmentaler and cover with the remaining batter.

    Bake for 30 minutes.

    Remove from the oven and cool.
