- 3/4 c. finely grated natural Cheddar cheese
- 1 1/2 c. soft white breadcrumbs
- 2 eggs, beaten
- salt and pepper to taste
- 2 tsp. prepared mustard
- dry breadcrumbs
- oil for deep frying
Directions

1Combine cheese and breadcrumbs in a bowl.

2Beat the eggs until frothy and mix in the salt, pepper and mustard.

3Combine with the cheese mixture and form into small balls.

4If mixture is too moist, add a little more soft breadcrumbs, but do not make the texture too dry and crumbly to coat.

5Heat oil for deep frying in wok and when hot, fry a few of the cheese balls at a time on medium heat until they are golden brown all over.

6Lift out and drain on absorbent paper.

7Serve warm or cold.

8Makes about 2 dozen.
