  • 4 lb boneless prime rib roast
  • 2 tbsp salted butter, softened
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp chopped parsley
  • 1 tbsp steak seasoning, like Montreal Steak Seasoning
  • 1 1/2 tsp chopped rosemary
  • None None fresh figs (black), for garnish

Directions

    Preheat oven to 425°F. Place roast in a roasting pan. Combine remaining ingredients. Coat roast with herb mixture. Roast for 20 mins. Reduce heat to 350°F and continue roasting for 45 mins to 1 hour or until thermometer inserted into beef reads 135°F for medium-rare. Let stand for 10 mins before slicing. Garnish with halved figs and additionally as desired.
