Savory Light Pasta Salad

Ingredients
- 1/4 c. Dijon mustard
- 1/4 c. red wine vinegar
- 1 Tbsp. to 1/2 c. olive oil (depending on diet)
- 2 green onions, thinly sliced
- 1 large clove garlic, finely minced
- 1 large tomato, seeded and chopped
- 1/2 c. each: sliced green pepper, broccoli flowerets and pea pods
- 1 lb. pasta, freshly cooked and drained
Directions

1In a large bowl combine mustard, vinegar, oil, onions, garlic and tomato.

2Let stand one hour at room temperature.

3Cook pasta according to directions and add green pepper, broccoli and pea pods to pasta and water for the last minute of boiling.

4Add drained pasta and vegetables to mixture.

5Toss lightly.

6Serve immediately.

7Garnish, if desired.
