  • 1 1/4 c. (2 to 2 1/4 oz.) seasoned croutons, crushed
  • 1/4 c. grated Parmesan cheese
  • 2 Tbsp. chopped fresh parsley or 2 tsp. dried parsley flakes
  • 1/8 to 1/4 tsp. paprika
  • 1 egg white
  • 1 tsp. water
  • 2 lb. fish fillets (1/2-inch thick, cod, orange roughy or haddock)

    Heat oven to 450°.

    Line 15 x 10 x 1-inch baking pan with foil.

    In small bowl, combine crushed croutons, cheese, parsley and paprika; mix well.

    In another small bowl, beat egg white and water until frothy.

    Place fish in foil-lined pan.

    Brush with egg mixture; sprinkle with crouton mixture.

    Bake at 450° for 15 to 20 minutes or until fish flakes easily with fork.
