- 1 1/4 c. (2 to 2 1/4 oz.) seasoned croutons, crushed
- 1/4 c. grated Parmesan cheese
- 2 Tbsp. chopped fresh parsley or 2 tsp. dried parsley flakes
- 1/8 to 1/4 tsp. paprika
- 1 egg white
- 1 tsp. water
- 2 lb. fish fillets (1/2-inch thick, cod, orange roughy or haddock)
Directions

1Heat oven to 450°.

2Line 15 x 10 x 1-inch baking pan with foil.

3In small bowl, combine crushed croutons, cheese, parsley and paprika; mix well.

4In another small bowl, beat egg white and water until frothy.

5Place fish in foil-lined pan.

6Brush with egg mixture; sprinkle with crouton mixture.

7Bake at 450° for 15 to 20 minutes or until fish flakes easily with fork.
