Ingredients

  • 1/4 cup oats
  • 1/4 cup plain almond milk
  • 1/2 cup plain Greek yogurt
  • 1/2 teaspoon tumeric powder
  • 1 tablespoon minced green onions
  • 1 Stalk asparagus, sliced into strips or french cut green beans
  • 1 teaspoon lemon juice
  • 1 teaspoon olive oil
  • 1/8 teaspoon ground black pepper
  • 1 tablespoon chopped pistachios for garnish

Directions

    Combine oatmeal, yogurt, milk, turmeric, pepper and green onions into a lidded jar with a 1 c capacity.

    In another lidded container add lemon juice, asparagus and olive oil.

    Place both containers in the refrigerator overnight or for 6 hours.

    Stir together the contents of both jars into a bowl and top with chopped pistachios.
