Ingredients

  • 3 lb. chuck roast
  • 1 Tbsp. cooking oil
  • salt
  • 1/4 c. wine vinegar
  • 1/4 c. catsup
  • 1/4 c. water
  • 2 Tbsp. soy sauce
  • 2 Tbsp. Worcestershire sauce
  • 1 tsp. dried rosemary
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dry mustard

Directions

    Brown meat slowly in hot oil; remove from heat.

    Drain. Sprinkle meat with salt.

    Combine vinegar and all remaining ingredients.

    Pour over meat.

    Return to heat.

    Cover tightly. Simmer until tender 1 1/2 to 1 3/4 hours.

    Remove meat to serving platter.

    Skim off excess fat from juices.
