- 2 Tbsp. oil
- 3 1/2 to 4 lb. pot roast
- 1 can cream of mushroom soup
- 1 pkg. dry onion soup mix
- 1 1/4 c. water
- 6 potatoes, quartered
- 6 carrots, cut into 2-inch pieces
- 2 Tbsp. flour
Directions

1In a 6-quart pot in hot oil, brown roast.

2Spoon off fat. Stir in soups and 1 cup water.

3Reduce heat to low. Cover and cook 2 hours. Add vegetables.

4Cook 45 minutes or until tender.

5Remove roast and vegetables.

6Stir together flour and remaining 1/4 cup water until smooth.

7Gradually stir into soup mixture. Cook

8until mixture boils and thickens, stirring constantly.
