- 12 cups Chicken Stock
- 1 cup Shredded Carrots
- 1 cup Finely Chopped Celery
- 1 Tablespoon Garlic Powder
- 1 quart Heavy Cream
- 3 pounds Velveeta
- 8 cups Shredded Cheddar Cheese
- 1 Tablespoon Salt To Taste
- 1 Tablespoon Pepper To Taste
Directions

1In large stock pot, bring to boil the chicken stock. Add carrots, celery and garlic powder. Simmer until celery is fairly transparent and carrots are mushy soft. Add heavy cream slowly while stirring constantly. Add Velveeta. Stir until melted. Add cheddar 1 cup at a time until melted.

2Simmer for approximately 30 minutes. Add salt and pepper to taste. Stir occassionally so that cheese does not burn on the bottom.

3If soup is not thick enough, add more cheese or make a milk and cornstarch slurry to add to soup.
