Scallop Casserole

Ingredients

  • 1 lb. scallops
  • 1 lb. fresh mushrooms
  • 1 c. cream
  • 1 oz. dry vermouth
  • 2 to 3 Tbsp. flour
  • 1/2 stick butter, in 2 even parts
  • salt and pepper to taste

Directions

    Melt 1/2 the butter; add flour and make smooth paste.

    Add cream and vermouth and cook until sauce is thick.

    Season. Saute mushrooms in 1/2 the butter for 3 minutes.

    Add scallops and cream sauce.

    Put in casserole and top with buttered bread crumbs. Bake at 400° for 20 to 30 minutes.
