Scallop Salad

Ingredients

  • 1 lb. sea scallops
  • 1 Tbsp. fresh cilantro, minced
  • 1/4 c. fresh chives, chopped
  • 1 Tbsp. grated orange rind
  • 1 orange, sliced
  • 1 c. herb vinaigrette dressing (any kind)
  • 3 c. assorted greens

Directions

    Toss scallops with 1/2 cup dressing.

    Cover and refrigerate to marinate 1 hour. Spread scallops on ungreased baking sheet. Broil until almost cooked.

    Remember, scallops will continue to cook after removing from broiler.

    Mix remaining 1/2 cup dressing with cilantro, chives and orange rind.

    Add cooked scallops with cooking liquid and toss.

    Cover and refrigerate 1 hour.

    Place each serving with greens and orange slices.

    Top with equal portions of scallop mixture.
