Ingredients
- 1 lb. sea scallops
- 1 Tbsp. fresh cilantro, minced
- 1/4 c. fresh chives, chopped
- 1 Tbsp. grated orange rind
- 1 orange, sliced
- 1 c. herb vinaigrette dressing (any kind)
- 3 c. assorted greens
Directions

1Toss scallops with 1/2 cup dressing.

2Cover and refrigerate to marinate 1 hour. Spread scallops on ungreased baking sheet. Broil until almost cooked.

3Remember, scallops will continue to cook after removing from broiler.

4Mix remaining 1/2 cup dressing with cilantro, chives and orange rind.

5Add cooked scallops with cooking liquid and toss.

6Cover and refrigerate 1 hour.

7Place each serving with greens and orange slices.

8Top with equal portions of scallop mixture.
