Scalloped Cauliflower

  • One 10 1/2 oz. can of condensed cream of celery soup
  • 1/2 c. milk
  • 2 eggs, slightly beaten
  • 1/2 tsp. fresh ground black pepper
  • 1/2 tsp. salt
  • 1 c. shredded cheddar cheese
  • 3/4 c. soft bread crumbs
  • 1/4 c. snipped parsley
  • 1/4 c. chopped pimento
  • 1 Tbsp. minced onion
  • 16 to 20 oz. fresh cauliflower, cooked and drained

Directions

    Combine soup, milk, and eggs. Stir in half of cheese, bread crumbs, parsley, pimento, onion, salt and pepper.

    Then add cauliflower.

    Turn into 10 x 6 x 2 inch baking dish.

    Bake at 350° for 35 minutes.

    Top with remaining cheese and bake 5 minutes more.

    Serves 6-8.
