- 17 oz. can cream-style corn
- 1 c. milk
- 1 egg, well beaten
- 1 1/4 c. coarsely crumbled saltine crackers
- 1/4 c. finely chopped onion
- 3 Tbsp. chopped, canned pimiento (optional)
- 3/4 tsp. salt
- dash of pepper
- 1 Tbsp. butter, melted
Directions

1Heat together the corn and milk.

2Gradually stir in the beaten egg.

3Add 1 cup of the cracker crumbs (reserve 1/4 cup for the topping), onion, pimiento, salt and pepper.

4Mix well.

5Pour mixture into a greased 8-inch round baking dish.

6Combine the 1/4 cup cracker crumbs and the melted butter.

7Sprinkle over corn. Bake at 350° for 20 minutes.
