  • 1 (27 oz.) cream-style corn
  • 1 c. milk
  • 1 well beaten eggs
  • 1 c. coarsely crumbled saltine crackers
  • 1/4 c. finely chopped onion
  • 3 Tbsp. chopped, canned pimiento
  • 3/4 tsp. salt
  • dash of pepper
  • 1/2 c. coarsely crumbled saltine crackers
  • 1 Tbsp. melted butter

Directions

    In a saucepan, combine corn and milk. Heat through.

    Gradually stir in egg. Add 1 cup crumbs, onion, pimiento, salt and pepper. Mix well.

    Pour into a greased 1-quart baking dish. Combine 1/2 cup crumbs and butter.

    Sprinkle over corn. Bake in a 350° oven for 20 minutes.
