- 1 (27 oz.) cream-style corn
- 1 c. milk
- 1 well beaten eggs
- 1 c. coarsely crumbled saltine crackers
- 1/4 c. finely chopped onion
- 3 Tbsp. chopped, canned pimiento
- 3/4 tsp. salt
- dash of pepper
- 1/2 c. coarsely crumbled saltine crackers
- 1 Tbsp. melted butter
Directions

1In a saucepan, combine corn and milk. Heat through.

2Gradually stir in egg. Add 1 cup crumbs, onion, pimiento, salt and pepper. Mix well.

3Pour into a greased 1-quart baking dish. Combine 1/2 cup crumbs and butter.

4Sprinkle over corn. Bake in a 350° oven for 20 minutes.

5Makes 6 servings.
