- 1 large eggplant
- 1 tsp. butter
- 1 green pepper, chopped
- 1 small onion, chopped
- pepper
- 1 c. bread crumbs
- 1 qt. chopped raw tomatoes
- 2 tsp. salt
Directions

1Pare eggplant; cut into small pieces.

2Heat butter in skillet. Add onions and pepper.

3Cook for a few minutes; add tomatoes, eggplant and seasoning. Cook for 10 minutes.

4Place in shallow greased baking dish.

5Cover with crumbs.

6Bake for 15 minutes at 350°, until crumbs are browned.
