  • 1 large eggplant
  • 1 tsp. butter
  • 1 green pepper, chopped
  • 1 small onion, chopped
  • pepper
  • 1 c. bread crumbs
  • 1 qt. chopped raw tomatoes
  • 2 tsp. salt

Directions

    Pare eggplant; cut into small pieces.

    Heat butter in skillet. Add onions and pepper.

    Cook for a few minutes; add tomatoes, eggplant and seasoning. Cook for 10 minutes.

    Place in shallow greased baking dish.

    Cover with crumbs.

    Bake for 15 minutes at 350°, until crumbs are browned.
