- 1 medium egg plant
- 1 beaten egg
- 1/2 c. milk
- 2 tbsp. melted butter
- 1 chopped onion
- 1 c. cracker crumbs
- 1/2 c. cracker crumbs for topping
Directions

1Peel egg plant and cut in 1 inch cubes.

2Cook in boiling salted water and drain.

3Add eggs, milk, butter, onion and 1 c. of crackers.

4Place in greased quart baking dish.

5Top with cracker crumbs.

6Bake for 30 minutes at 350 degrees.
