Wild Rice Soup

Ingredients
- 3 Tbsp. butter
- 1 Tbsp. minced onion
- 1/4 c. flour
- 4 c. chicken broth
- 2 c. cooked wild rice
- 1/2 tsp. salt
- 1 1/2 c. half & half
- 2 Tbsp. wine
- 2 stalks celery, chopped fine
- 1 c. cooked chicken, cubed
- 1/2 c. grated carrots
- 3 Tbsp. slivered almonds
- minced parsley
- 1 c. shredded cheese
Directions

1Melt butter in saucepan.

2Saute onion and celery until tender. Blend in flour; gradually add broth.

3Cook, stirring constantly, until mixture thickens and then stir in rice, carrots, almonds, chicken and salt.

4Simmer 5 minutes.

5Blend in half & half and wine. Heat to serving temperature and add cheese and parsley.
