Scalloped Pineapple

  • 1 large can chunk pineapple
  • 3 eggs
  • 2 sticks butter
  • 4 c. fresh bread (8 slices)
  • 2 c. sugar

Directions

    Drain pineapple and save 1/2 of juice.

    Toss pineapple and bread together.

    Spread in 9 x 13-inch greased glass Pyrex dish. Cream eggs, butter and sugar.

    Mix well.

    Add 1/2 juice of pineapple; mix well again.

    Pour mixture over pineapple and bread. Bake for 1 hour at 350°, uncovered, in middle of oven.

    Good with pork or ham.
