Scalloped Spinach

  • 2 (10 oz.) pkg. frozen chopped spinach
  • 3/4 c. milk
  • 3/4 c. shredded American cheese
  • 3 beaten eggs
  • 3 Tbsp. chopped onion
  • 1 c. soft bread crumbs
  • 1 Tbsp. butter, melted

Directions

    Cut spinach according to package directions; drain well.

    Mix with milk, 1/2 cup of the cheese, eggs, onion, 1/2 teaspoon salt and dash of pepper.

    Turn into greased 8 x 8-inch baking pan. Bake at 350° for 25 minutes.

    Combine crumbs, remaining cheese and butter.

    Sprinkle on spinach.

    Bake until knife inserted off center comes out clean, 10 to 15 minutes longer.

    Let stand 5 minutes before serving.
