Scalloped Squash

Ingredients

  • 5 to 6 yellow squash
  • 1 Tbsp. butter
  • salt and pepper to taste
  • bread crumbs (equivalent of 2 slices)
  • 1 beaten egg
  • 1 Tbsp. onion, cut up fine
  • 2 Tbsp. cream

Directions

    Cook squash until soft (I peel and cut into quarters and cut out seeds).

    Add egg, butter, onion and seasonings to mashed squash and mix well.
  3. 3
    Add cream and bread crumbs and bake at 375° until brown (I use a long Pyrex dish).
