- 1 lb. large scallops, drained
- 2 c. broccoli flowerets
- 1 c. red pepper strips
- 1 garlic clove, minced
- 2 tsp. basil
- 4 Tbsp. margarine
- 1/2 lb. Velveeta, cubed
- 2 Tbsp. dry sherry (optional)
- 4 c. cooked rice
Directions

1Saute broccoli, peppers, garlic and basil in margarine.

2Add scallops; continue cooking for 2 to 3 minutes or until tender. Stir in Velveeta cheese and sherry; continue heating until cheese is melted.

3Serve over rice.
