Ingredients
- 3 Tbsp. butter
- 1 Tbsp. shallots, minced
- 2 tsp. garlic, minced
- 1 c. mushrooms, chopped
- 1 Tbsp. parsley, minced
- 1/4 tsp. oregano or basil
- 3/4 c. white wine
- 2 tomatoes, peeled, cored and seeded
- salt and pepper
- 1/4 c. Italian bread crumbs
- 1/2 c. mixed Romano and Parmesan
- 1 lb. sea scallops
Directions

1Saute shallots and garlic in hot butter until soft.

2Add mushrooms, parsley and basil.

3Cook for 2 minutes.

4Add wine and cook briskly until reduced by half.

5Add tomatoes and mix well. Salt and pepper to taste.

6Add scallops and stir.

7Heat thoroughly.

8Sprinkle with bread crumbs and cheese.

9Broil 3 inches from heat until brown and bubbly.

10Serve immediately.
