Spanish Rice Casserole

Ingredients
- 1 lb. ground beef
- 1 tsp. salt
- dash of pepper
- 1/4 c. margarine
- 1 c. white rice
- 1 small onion, chopped
- 1 medium green pepper, chopped
- 1 c. water
- 1 (16 oz.) can tomatoes
- 1 (4 oz.) can mushrooms, sliced
Directions

1Mix ground beef, salt and pepper.

2Form into small balls. Heat in a large skillet the margarine and meat balls.

3Brown slightly.

4Remove meat balls.

5Add to skillet the rice, onion and green pepper.

6Cook over medium heat, stirring constantly until lightly browned.

7Add 1 cup of water, tomatoes and mushrooms; mix well.

8Add meat balls and bring to a boil.

9Cover and reduce heat. Simmer, covered, for 30 minutes.
