Spanish Rice Casserole

Ingredients

  • 1 lb. ground beef
  • 1 tsp. salt
  • dash of pepper
  • 1/4 c. margarine
  • 1 c. white rice
  • 1 small onion, chopped
  • 1 medium green pepper, chopped
  • 1 c. water
  • 1 (16 oz.) can tomatoes
  • 1 (4 oz.) can mushrooms, sliced

Directions

    Mix ground beef, salt and pepper.

    Form into small balls. Heat in a large skillet the margarine and meat balls.

    Brown slightly.

    Remove meat balls.

    Add to skillet the rice, onion and green pepper.

    Cook over medium heat, stirring constantly until lightly browned.

    Add 1 cup of water, tomatoes and mushrooms; mix well.

    Add meat balls and bring to a boil.

    Cover and reduce heat. Simmer, covered, for 30 minutes.
