Scone Custards

Ingredients

  • 300ml of milk
  • 300ml of cream
  • 1 tsp of vanilla essence
  • 3 eggs
  • 1/4 cup of sugar
  • 8 sweet scones (sliced thinly into 3)

Directions

    Preheat oven to 150 degrees.

    Bring milk and cream to boiling point with vanilla, but becareful not to boil, remove from heat and allow to cool.

    Whisk eggs and sugar together and gradually whisk in cream mixture to make custard.

    Layer scone rounds into well greased individual ramekins, topping with a little custard until full.

    Place in a baking dish. Add enough hot water to come half way up the sides of the dish...Waterbath...

    Bake for 30-40 minutes or until firm.
